Burritos are tortillas which have been folded or wrapped into cylindrical shapes to enclose fillings completely. Burritos are made by folding tortillas in half, around a filling and then leaving the semi-circular perimeter open. The tortilla is lightly steamed or grilled to soften it and make it more malleable. Mexican Burritos are filled with refried beans and meat filling. In the U.S. however, Burritos can be filled with just about any desired fillings ranging from Mexican-style rice, plain rice, refried beans, salsa, and lettuce to meat, guacamole, sour cream, cheese etc.

In Mexican cuisine, a chalupa refers to a toasted platter. Chalupas are south-central Mexico delicacies. They are popular in states such as Oaxaca, Guerrero and Puelba. Chalupas are prepared by pressing masa dough around a small mold to create a concave container-like molding that resembles a boat which goes by the same name. The molding is then deep fried to a crisp shallow corn cup. The resulting molding is then filled with ingredients such as shredded pork, chicken, chipotle pepper, chopped onion and red or green salsa.

Traditional chalupas, which are popular in Cholula in Puebla, are small and thick boat-shaped fried masa harina topped with cheese, salsa, and shredded lettuce. There are however many other chalupas variations. Other regions include pork, chorizo, bean paste or shredded chicken in addition to the classic salsa, cheese, and lettuce toppings.
